Deep fried Zucchini


3 medium zucchini

1 cup flour

2 tsps baking powder

1 tsp salt

1/2 cup corn meal

1/4 cup tsp black pepper

1/2 tsp garlic powder

1 tsp seasoned salt

1 cup milk

1 egg, beaten

3 tbs oil


Cut zucchini into 1/4-inch slices. Set aside. Combine dry ingredients. Combine milk, egg and oil and mix with dry ingredients.

Pour oil into a saucepan to a depth of at least 1 1/2 inches. Heat oil to 375 degrees. Dip zucchini in batter to coat; shake slighly to remove excess batter. Drop into hot oil and fry until golden brown. Remove with a slotted spoon, place in a paper towel-lined baking dish and hold in a 200 degree oven until all slices are fried.


Sweet & Sour sauce

1/4 cup currant jelly

1/4 cup prepared mustard

To prepare sauce, bring jelly and mustard to a simmer in saucepan. Serve in a small bowl surrounded by deep-fried zucchini.
