3 tbs bacon drippings
4 tbs oil
1/2 cup cornmeal
6 tbs flour
1 tsp salt
Dash of salt
1 egg, slightly beaten
1 tbs water
4 river catfish
Heat bacon drippings and oil in a large skillet. Combine cornmeal, flour, salt and pepper. Mix egg and water. Dip fish into egg, then into cornmeal mixture. Place in hot oil and fry at medium heat until golden brown on both sides.
