INGREDIENTS:
6 to 8 bratwurst links
Several strips of bacon
1 27 oz. can kidney beans
1 14 oz. can diced peeled tomatoes
1 28 oz. can stewed tomatoes (mostly drained)
3 ? oz. diced green chilis
? cup green bell pepper
4 clove garlic (minced)
1 cup onion
? cup onion (extra, see recipe)
12 oz. Pale Ale (2Fellers Misty Mountain Hop IPA, or comparable)
1 tbsp ground cumin
2 ? tbsp chili powder
1 tbsp cayenne pepper
1 tsp. garlic salt
1 tsp. black pepper
PROCEDURE:
First, get ready to eat some of the best chili you've ever had. I created this recipe one night in preparation for a "Chili Cookoff" the next day at work. It's still legendary.
Cook brats on grill until pink in middle. Do NOT char outside. Remove from grill. Let cool a bit, slice, and fry with ? cup extra portion of chopped onion. Set aside.
For extra flavor, fry bacon in frying pan. Save bacon and grease.
In crock or large pot:
Mix all canned, vegetable, beer and spice ingredients. Stir together well. If you have the gonads, add in some sliced jalapeno pepper and up the percentage of cayenne pepper, but only a bit.
Add meat (brats/onions and bacon/grease).
COOKING:
Crock pot:
Cook 3 hours on high.
On stove:
Bring to boil, mixing well. Reduce heat, simmer 2 hours.
