2 large ripe avocados
1 tbs lime juice
1 medium tomato, skinned and finely chopped
2 tbs onion, minced
1/2 tsp ground coriander
1/2 tsp salt
1 tbs picante sauce (optional)
Peel avocados, remove pits and preserve one pit. Mash pulp with fork. Add lime juice, tomato, onion, coriander and salt. Add picante sauce if desired. Mix well. Place avocado pit on top of guacamole, cover and refrigerate; remove pit when ready to serve.
